All these healthy Mexican recipes benefit from a sprinkle of shredded cheese, sour cream, jalapeño, red onions, taco slaw, tomatoes, black beans, avocado, fresh cilantro, and a squeeze of fresh lime juice. Oh, and a skinny margarita on the weekends. 😉
For the meats, you can serve them over rice (or my cilantro lime cauliflower rice), with a side dish like Mexican street corn, over greens for a salad (my personal fave), stuffed into your favorite tortillas, or even in cheese taco shells.
