Feel free to substitute yellow squash in any of these, too — it works interchangeably with zucchini in virtually any dish.
Basic Zucchini Recipes
Flavorful, tender zucchini makes the perfect healthy side dish, and I love that it doesn’t require too many ingredients to taste amazing. I usually use basics like olive oil, garlic, fresh herbs, salt, pepper, and sometimes cheese or a pop of lemon.
If you want to avoid cooking altogether, make my zucchini salad instead!

Sometimes a plain knife just won’t do. These are my favorite tools from years of prepping zucchini recipes — for cleaning, cooking, and everything in between.
Comfort Food Ideas
Another beautiful thing about zucchini is it makes an amazing stand-in for many comfort foods! I enjoy it in place of everything from pasta to fries to chips… and more. Try these fun ways to turn it into something totally new:
My Top Tips For Cooking Zucchini
- My top 2 tools for zucchini are my spiralizer and mandoline. The spiralizer is my favorite for making zoodles, and doesn’t slide all over my counter. The mandoline is the fastest method when you want to slice zucchini into either rounds or sheets — plus they all come out the same thickness for even cooking, unlike using a knife.
- Watch out for water. When you use zucchini in baking or casseroles, its high water content can make them soggy. In these situations, it can help to either precook the squash, or salt it and drain over the sink to get rid of excess moisture. It depends on the recipe, and I always include details on this part when it’s needed for my zucchini recipes!
- Larger zucchini has more water and seeds. This doesn’t always make much difference, but is useful to know if it might affect your dish.
- When is zucchini in season? Peak zucchini season is June through August. I’ll be honest, though, I cook zucchini recipes year round.
- Have too much zucchini to cook at once? I’ve definitely been there after summer days at the farmers’ market! It inspired me to make a tutorial for freezing zucchini — there are a few methods depending on how you’ll use it later.
Sweets & Snacks With Zucchini
My zucchini desserts are some of the more fun ways to use this summer squash. It pairs surprisingly well with blueberries or sugar-free chocolate chips! Try one of my healthy zucchini recipes below next time you’re craving a sweet treat or snack:
