The simple addition of melty cheeses, a few real garlic cloves, and a creamy drizzle of my hollandaise sauce give it a totally different vibe, but it’s almost just as easy! And yes, it’s as delicious as it sounds.
Why You’ll Love My Asparagus Casserole Recipe

- Creamy and cheesy – In fact, I’ve got two cheeses in this thing, plus the silky, buttery hollandaise. It’s a rich, decadent way to eat your veggies.
- Sweet, tender asparagus – The sweet, earthy spears balance out all that richness. And since they bake for a short time, they have the perfect tenderness without being mushy.
- Quick and easy – It may look elegant, but you can have my asparagus casserole on the table in just 20 minutes. No whisking, no chopping. It’s one of the reasons I love asparagus.
- Simple ingredients – Not too many of them, and nothing procesed here. Since the veggies, cheese, and sauce are already so flavorful, you don’t need any breadcrumbs or mystery cream-of soups.
- Perfect for many occasions – I think the spring vegetables and sauce in this dish make it particularly great for Easter or Mother’s Day, but you can make it on any weekend, or even use it as a side for a regular dinner.


Ingredients & Substitutions
Here I explain the best ingredients for my asparagus casserole recipe, what each one does, and substitution options. For measurements, see the recipe card.
- Fresh Asparagus – Trim the woody ends. You can do this all in one go with a knife, but I usually bend each stalk and let it snap. This way, just the right amount gets removed.
- Oil – You can use regular olive oil or avocado oil for a mild taste, or extra virgin olive oil for a richer flavor.
- Garlic – I used 4 cloves of fresh minced garlic, but you can substitute 2 teaspoons of jarred minced garlic or 1/2 teaspoon garlic powder. A teaspoon of lemon zest also makes a nice addition for a little lemony flavor.
- Shredded Cheese – I kept it simple with the cheddar and mozzarella I always have around. You can use any mixture of cheeses. Gouda, provolone, gruyere, or parmesan cheese have stronger flavors and pair nicely with asparagus.
- Hollandaise Sauce – The sauce makes this dish (and makes it different from my plain cheesy asparagus)! I make my easy hollandaise sauce in a blender, and it doesn’t add any extra time because you can do it while the asparagus roasts. All you need is melted butter, egg yolks, lemon juice, and sea salt.
- Chives – Feel free to substitute other fresh herbs, like dill or thyme.
- Sea Salt & Black Pepper

How To Make Asparagus Casserole
I have step-by-step photos here to help you visualize the recipe. For full instructions with amounts and temperatures, see the recipe card.
- Season the asparagus. In a large bowl, mix the trimmed asparagus with olive oil, garlic, salt, and pepper. Move asparagus around and stir to coat. (You can also do this directly in your baking dish, but then you’ll need to remove it to make the layers.)
- Assemble the layers. Place 1/3 of the asparagus into a small casserole dish (I use this one and it’s the perfect size for trimmed spears), then sprinkle with 1/3 of the cheeses. Repeat for a total of 3 layers of each.


- Pop in the oven. Bake your asparagus casserole until the stalks are tender. (The cheeses will melt by the time this happens, too.)
- Blend the sauce. While the asparagus is baking, make my hollandaise sauce recipe here. I can actually do it before the asparagus is even done!

- Add the toppings. Pour the hollandaise sauce evenly over the casserole, and sprinkle with chopped chives.

My Recipe Tips
- I recommend medium to thin asparagus spears, so that they become tender before the cheese burns. Thick asparagus will take longer to cook, so if that’s what you have, you may need to cover the baking dish if the cheese browns too much before the stalks are tender.
- Add the sauce immediately before serving. The eggs in the hollandaise can start to cook if it sits on the hot asparagus for too long, so you’ll want to eat it right away.
- Layer in a protein to make it a meal. Each serving already has a good dose of protein (12 grams) if you want it to be a veggie-forward main dish, but I still feel like I need to add something to make meal-worthy. To do this, just layer leftover ham or shredded Instant Pot chicken between the asparagus and the cheeses.
Storage Instructions
- Store: Since my recipe for asparagus casserole is topped with hollandaise, it really tastes best fresh and is not ideal for storing. If you have leftovers, they’ll last for 3-4 days in the refrigerator, as long as you haven’t put on the sauce.
- Meal prep: Trim the spears in advance and keep them in an airtight container in the fridge. You can even season and layer the casserole 1-2 days ahead of time.
- Freeze: I don’t recommend freezing, either, as the asparagus becomes mushy and the sauce doesn’t freeze well.

Serving Ideas
The flavors in this asparagus casserole recipe just scream “spring brunch” to me! But as always, I’ve got options for different meals for you:
- Sweet Brunch – To balance out the sweet, creamy flavors in this dish with something sweet, try my banana oat pancakes (my kids’ fave), protein waffles, or almond flour banana bread.
- Savory Brunch – Cheesy breakfast casserole is my top pick, but you can also make a simple omelette or egg muffins for something smaller. Sometimes I just throw some bacon in the oven, or pull out a platter of lox with fresh veggies. I also love this with my pineapple glazed ham for holidays.
- Dinner – It doesn’t have to be brunch. I’ve also served this asparagus casserole for dinner with filet mignon or reverse sear steak for holidays, or even simple baked chicken breast for regular days.
- Seafood – I find that this can cross over between brunch and dinner, so you decide. Try my simple baked salmon, or if you want something special, baked halibut or lobster tails.
- Salads – Again, these can be for brunch or dinner! A bright cucumber tomato salad or radish salad is perfect to add freshness to your meal.
My Favorite Baking Dish For This Recipe
This asparagus casserole isn’t that big, so your regular 9×13 baking dish might be too big. I love to make it in this baking dish, which is a smaller version of my trusty larger one.

Preheat the oven to 400 degrees F (204 degrees C).

In a large bowl, combine the asparagus with the olive oil, garlic, salt, and pepper. Move the pieces around to coat everything.

Layer 1/3 of the asparagus into a small baking dish that can fit the spears (this one is the perfect size) and top with 1/3 of the cheeses. Repeat for a total of 3 layers of each.

Bake for about 15 minutes, or until the asparagus is done to your liking.

0Hi Ann, I’m not sure anything else would work as well, you could omit the sauce but it would be less of a casserole.

0I typically throw my asparagus on the BBQ, but this was a great change of pace. They were super saucy and cheesy, which was a big hit with my family. Not sure I’d do it regularly because it does take some effort and is probably quite high in fat, great if you’re doing keto though (which I am currently not). I highly recommend trying it for sure though!!

0Hi Ali, Yes, you can. I would place the spears in the opposite direction, with their length going across the short side. As long as you keep it to 3 layers (which I’d recommend doing), the cook time would be the same. Hope this helps!

0We’re having a family memorial reunion next week so it’s for my mom, son, and grandson, so there will be a lot of people, family members. I’m a diabetic, so I’ll be doing the cooking. I love zucchini, summer squash, and cauliflower, so I will be making the casseroles as side dishes and the asparagus.
