My kids and husband love cucumbers, and this cucumber onion salad is my favorite to throw together that I know they’ll eat… even if I end up finishing most of their onions. Good thing I love onions. 😉 Here’s why this recipe is my everyday summer go-to:
- Light, tangy, and refreshing – This cucumber onion salad recipe is a crisp, fresh take on my creamy cucumber salad, a lot like the ones we always had on our Eastern European family table growing up. It’s my Goldilocks of cucumber salads: sweet but not too sweet, tangy but not too tangy… it’s just right.
- Fast and easy – Made with 6 ingredients (plus salt and pepper), this salad comes together in just 10 minutes. I love it for busy days or last-minute meals.
- Perfect summer side dish – I make this cucumber and onion salad year round, but especially in the summer to go with grilling recipes, to bring to potlucks, and as a simple side for breezy summer dinners.

Ingredients & Substitutions
Here I explain the best ingredients for my cucumber onion salad, what each one does in my recipe, and substitution options. For measurements, see the recipe card.
- Cucumbers – Fresh cucumbers from the farmers’ market are my favorite — they remind me of my grandma’s garden — but store-bought work, too. I ‘recommend Persian cucumbers because they’re sweeter, crisp, and their small size means less slicing. English cucumbers are the next-best and I cut those into half moons. Avoid American cucumbers if you can — they have a thicker skin, big seeds, and not much flavor.
- Onion – I prefer Vidalia onion here because it’s mild and sweet, but any sweet onion works well. You can use red (for a cucumber red onion salad) or white onions if you like more bite. On the other hand, if you want less bite, soak the onions in cold water for 15 minutes first, then pat dry and use in the salad.
- Fresh Herbs – Fresh dill is my favorite here (might be my Eastern European roots?), but fresh chives are nice, too.
- Olive Oil – The dressing base. Avocado oil works, too.
- Lemon Juice – Most cucumber salad recipes use a dressing with oil and vinegar, but I make mine with fresh lemon juice. If you want to use bottled for convenience, I highly recommend getting a quality one that’s pure lemon juice without fillers. You can definitely swap in vinegars, like white vinegar, white wine vinegar, or apple cider vinegar if that’s what you’ve got.
- Honey – I use my Wholesome Yum Zero Sugar Honey, which is 100% natural. Any kind you like is fine.
- Sea Salt & Black Pepper

How To Make Cucumber Onion Salad

- Mix the veggies. Cut and toss the cucumbers, onions, and dill into a big bowl.
- Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
- Combine it all. Pour the dressing over the cucumber onion salad and give it a good mix to coat.



My Recipe Tips
- Slice the veggies very thin. Thin slices make the salad taste fresher and more balanced. And no one wants a big bite of raw onion. I like to use my mandoline for the cucumber slices uniform and thin.
- If you want to make this cucumber onion salad ahead, you may want to drain the cucumbers. This makes it so the salad doesn’t get watery later. Just sprinkle with sea salt and let them sit in a colander to release extra water for 15-30 minutes. Pat dry before mixing with the other ingredients.
- Adjust to taste. The ideal dressing ratio is partly a matter of preference, but also depends on the flavor and sweetness of your cucumbers. Feel free to add an extra splash of lemon juice, drizzle of honey, or pinch of salt if your cucumber and onion salad feels like it needs a little something.
- Want to add extras? This salad is lovely with a sprinkle of feta cheese, diced tomatoes, or avocados. You might also like my cucumber tomato salad or tomato cucumber avocado salad.

In a large bowl, combine the cucumbers, onions, and fresh dill.

- Storage: You can keep leftovers in an airtight container in the fridge for up to 2-3 days. They do get watery so you might need to drain and then adjust the flavor after stirring.

I’ve served this cucumber onion salad with so many of my healthy dinner recipes! Here are my favorites in the warm months in particular:
- Grilled mains – This crisp salad is a wonderful fresh contrast to hearty grilled chicken thighs, grilled steak, or grilled salmon.
- Burgers – I make my classic hamburgers most often, but this cucumber and onion salad is also amazing with crispy smash burgers. You can even mix it up with my salmon burgers, turkey burgers, or lamb burgers.
- Light, fast meals – Since this salad comes together so fast, I like to pair it with other light meals I can throw together quickly, like air fryer chicken tenders (I use very similar ingredients in the marinade!), chicken paillard, or salmon patties.
