GET IT NOWI Make These Cucumber Noodles Without Cooking Anything

If you’ve never tried a cucumber noodles, it’s time to start! They’re cool, crunchy, and takes just 10 minutes from start to finish. Here’s why I’m certain you’ll enjoy them this summer:
- Light, crisp, and refreshing – Think of these as zucchini noodles’ crispier, brighter, raw cousin. If you’re a fan of cucumbers like me, you’ll love them turned into noodles.
- Make ahead if you like – These noodles hold up so much better than lettuce in a salad. I’ve made them hours in advance, and they’re still crunchy by dinnertime!
- No cooking whatsoever – I love zoodles, but they need cooking and cleanup. With cucumber noodles, I spiralize, toss, and I’m done. It’s a summer go-to for sure.
I paired my cucumber noodles with tahini sauce this time, but they’re also amazing with pesto or as a base to just about any salad. Make them with me!

Ingredients & Substitutions
Here I explain the best ingredients for my cucumber noodles recipe, what each one does, and substitution options. For measurements, see the recipe card.
- Cucumbers – I recommend making cucumber noodles using English cucumbers, because their larger size is convenient to spiralize… and they’re not tasteless like I find American cucumbers to be.
- Tahini Sauce – I love this as a “dressing” here. You can totally use the ones from my cucumber onion salad or creamy cucumber salad if you want something milder.
- Pine Nuts – These add the perfect little crunch and buttery flavor. You can also use slivered almonds or chopped walnuts, or for a nut-free option, sesame seeds or pepitas.
- Parmesan Cheese – I go for shredded parm instead of grated because it adds texture. Crumbled feta or shaved pecorino would be great swaps.
- Fresh Parsley – I’ve also used fresh dill or mint.
- Sea Salt

How To Make Cucumber Noodles

- Spiralize and salt. Spiralize the cucumbers with a spiralizer (this is my favorite), sprinkle with salt, and let them drain over the sink for 15 minutes.
- Make the sauce. While the cucumbers drain, make my tahini sauce recipe in a small bowl.
- Assemble the cucumber noodles. Pat them dry, plate, and drizzle with tahini sauce. I like to finish with pine nuts, parmesan, and parsley.



My Recipe Tips
- I’ve tried all kinds of tools, but my top pick is this countertop spiralizer. It’s fast, easy to clean, and doesn’t slide around. You can also use a handheld spiralizer, julienne peeler, or even a mandoline, but the texture and thickness will vary.
- Salting the cucumbers is key. This step improves the noodle texture and prevents them from getting watery fast.
- Once you add the dressing, serve right away. Cucumber noodles don’t hold up well once they’re dressed, so I always wait until just before serving to add the sauce.

Instructions

Spiralize the cucumbers using a spiralizer. Sprinkle with salt and set over the sink to drain for 15 minutes.

Serving Ideas
You can serve cucumber noodles with just about anything depending on what you top them with, but since I went with a Mediterranean vibe here, I recommend mains to match. Try these:
- Grilled ideas – I love it with lamb kofta kebabs and grilled shrimp, but these cucumber noodles are just as refreshing with my simpler grilled chicken, grilled steak, or even chicken burgers. All of them are fantastic with the same tahini sauce, too!
- Indoor ideas – If you’re cooking inside, my Greek chicken, gyro meat with tzatziki, or a juicy lamb burger makes the perfect pairing. When I’m not in the mood for the tahini topping, I love the sauce from shrimp saganaki over these noodles to make them a light meal.
